Mindo Chocolate Makers at Hollander's in Kerrytown in Ann Arbor, Michigan

From Bean to Bar – Making Chocolate with Barbara Wilson. Learn the process of how chocolate is made from cacao bean to chocolate bars and how you can make your own delicious chocolate at home using a food processor. Barbara and her husband own their own chocolate making business, where they buy their beans directly from the plantations in Ecuador. Class Fee: $15

Barbara is the owner of Mindo Chocolate Makers, a local based business making and selling chocolate. She is a graduate of Ecole Chocolat, a Master Chocolate Making program in Vancouver, British Columbia. She and her husband also own El Quetzal de Mindo in Mindo, Ecuador.

We will learn about cacao harvesting, fermenting, roasting, making chocolate liquor, conching, tempering all the way to making chocolate bars. Come see and taste the freshest Ecuadorian chocolate.

DOUBLE ORIGINS TOUR COFFEE AND CHOCOLATE

Ten day origins tour of both coffee and chocolate. We will visit a coffee nursery and plantation during harvest time and learn how to ferment and process coffee all the way through the roast. We will also visit a cacao plantation and ferment, dry and roast our own cacao. We will take the cacao through to complete the chocolate through roasting, making chocolate liquor, conching, tempering to making our own chocolate bars. Very complete tours of both chocolate and coffee in English. This double origins tour will be held in Mindo, Ecuador, #1 for number of bird species in the world. Mindo is set in a beautiful protected cloud forest known for its waterfalls, orchids, butterflies and of course world class birding.
